I got this recipe from my friend Mandy while I was doing a nutrition challenge several years ago. They’re no sugar, no gluten, can be vegan.

Ingredients
- 1 egg
- 1/4 cup non-dairy milk (oat, almond, rice, etc)
- 1/2 cup butter (or coconut oil)
- 1/2 cup coconut oil (warmed to liquid)
- 1/2 cup honey
- 1 tsp vanilla
- 1 1/2 cups oat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp sea salt
- 3 cups rolled oats
- 1/2 cup chopped nuts (pecans, walnuts)
- 1/4 cup sunflower seeds
- 1 chopped apple
Instructions
- Preheat oven to 375
- Mix all dry ingredients
- Mix wet ingredients
- Slowly add dry ingredients to wet
- Mix in nuts, seeds, apple
- Use a Tbsp to make cookies on sheet. They don’t spread.
- I recommend flattening them with the back of the spoon and sprinkling a little flaky salt on top.
- Bake for 9-12 minutes.
Makes a lot of cookies. I usually put about half in the freezer, which actually keeps them from falling apart. Enjoy!
