Healthy Cookies

I got this recipe from my friend Mandy while I was doing a nutrition challenge several years ago. They’re no sugar, no gluten, can be vegan.

Ingredients

  • 1 egg
  • 1/4 cup non-dairy milk (oat, almond, rice, etc)
  • 1/2 cup butter (or coconut oil)
  • 1/2 cup coconut oil (warmed to liquid)
  • 1/2 cup honey
  • 1 tsp vanilla
  • 1 1/2 cups oat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp sea salt
  • 3 cups rolled oats
  • 1/2 cup chopped nuts (pecans, walnuts)
  • 1/4 cup sunflower seeds
  • 1 chopped apple

Instructions

  1. Preheat oven to 375
  2. Mix all dry ingredients
  3. Mix wet ingredients
  4. Slowly add dry ingredients to wet
  5. Mix in nuts, seeds, apple
  6. Use a Tbsp to make cookies on sheet. They don’t spread.
  7. I recommend flattening them with the back of the spoon and sprinkling a little flaky salt on top.
  8. Bake for 9-12 minutes.

Makes a lot of cookies. I usually put about half in the freezer, which actually keeps them from falling apart. Enjoy!
