Banana egg pancakes

I’ve always been skeptical of the “just combine and egg and a banana and it’s a pancake” recipe. But add a couple more ingredients and they’re not bad (although not particularly photogenic)

Ingredients

  • 1 banana
  • 1 egg
  • 3-4 Tbsp nondairy milk (oat, almond, etc)
  • 2 Tbsp ground flaxseed
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract

Combine all ingredients, mashing the banana with the back of a fork or a whisk. Heat some butter on the stove and have yourself some pancakes! Top with nut butter, a side of fruit and coffee.
