Sometimes you’re doom scrolling and the Instagram throws something good your way. These cookies were them.

Ingredients
- 1 cup dates
- 1 cup almond butter
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 cup chocolate chips
- 1 tsp coconut oil
- Flaky sea salt
Instructions
- Preheat oven to 350.
- Combine dates and almond butter in food processor. Add water 1 Tbsp at a time to make it come together into a ball.
- Add vanilla and baking soda.
- Form into balls on baking sheet.
- Smash each ball with the back a fork to make a cross hash.
- Bake 9 minutes.
- While cookies are baking melt chocolate in a double boiler with the coconut oil.
- Drizzle chocolate on cookies and top with sea salt.
- Let cool if you like the shell chocolate or eat right away if you like melted chocolate 🙂
