Healthy cookies #2

Sometimes you’re doom scrolling and the Instagram throws something good your way. These cookies were them.

Ingredients

  • 1 cup dates
  • 1 cup almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt

Instructions

  1. Preheat oven to 350.
  2. Combine dates and almond butter in food processor. Add water 1 Tbsp at a time to make it come together into a ball.
  3. Add vanilla and baking soda.
  4. Form into balls on baking sheet.
  5. Smash each ball with the back a fork to make a cross hash.
  6. Bake 9 minutes.
  7. While cookies are baking melt chocolate in a double boiler with the coconut oil.
  8. Drizzle chocolate on cookies and top with sea salt.
  9. Let cool if you like the shell chocolate or eat right away if you like melted chocolate 🙂
