Thai Venison Satay with sautéed Napa cabbage AND leftovers

The Thai Venison Satay skewers are from Buck Buck Moose cookbook. Made some rice to go with them and had some leftover Napa cabbage I needed to use so I basically followed this recipe https://www.foodandwine.com/recipes/stir-fried-napa-cabbage-spicy-garlic-dressing, added a shredded carrot and eggplant in the air fryer (tossed with some sesame oil, soy sauce and sesame seeds).

The peanut sauce makes a LOT. So I added about a cup and a half of water to the leftovers and used it with chicken, onion, bell pepper, and potatoes for another meal.
