Cascatelli with ground Turkey and veggies

If you don’t know about Cascatelli go listen to the Sporkful podcast mini series Impastable. Basically Dan Paschmin sets out on a quest to create the perfect pasta. I don’t know if it’s perfect, but it’s damn good and I waited at least 10 weeks for my boxes to arrive.

I threw together the sauce tonight based on what we had. And I didn’t measure anything. But it turned out well so here’s what I did.

Ingredients

  • 1 lb ground Turkey
  • Pesto Parmesan shaker spice from Penzky’s
  • EVOO
  • Salt and pepper
  • Italian spice blend
  • 2 shallots
  • 1/2 head broccoli
  • Most of a bag of spinach
  • 1/2 box cherry tomatoes cut in half
  • Couple splashes of White wine
  • Drizzle of balsamic
  • Splash of lemon juice
  • 3 slices mozzarella cheese
  • Calabria spicy sauce (just a bit)
  • 1 Tbsp butter
  • Splash of cream
  • Top with freshly grated Parmesan cheese
  • 1/2 box cascatelli pasta
  • Several ladle-fulls of starchy pasta water in the sauce

I am breaking my blog rules by not keeping track of measurements but I’m tired and leave for Mexico on Saturday and didn’t want to lose track of the ingredients if I want to make something similar again.
