Corned Beef and cabbage

So bummed I didn’t take a photo cuz this was beautiful! It was my first time making it so I just used the store-bought corned beef and spice packet. Would like to do it myself with a venison roast next St Patty’s Day!

Ingredients

  • 1 2-4 lb corned beef with spice packet
  • 4-5 carrots
  • 1 onion
  • 5 yellow potatoes
  • 1/2 head cabbage
  • 1 beer of choice (I used a pale ale)
  • 2-3 cups water

Instructions

  1. Chop onion, carrots, potatoes into 1-inch chunks. Put at bottom of slow cooker.
  2. Place meat (fat side up) on top of the veggies.
  3. Pour in spice packet, beer and 2 cups water.
  4. Slow cook on low for 10 hrs.
  5. Add cabbage during the last hour.

Next time I’d add garlic. The potatoes got a little mushy, I don’t know how to prevent that. Here’s a doodle.
