Green curry with chicken and spaghetti squash

Easy quick curry dish with spaghetti squash instead of rice.

Ingredients

  • 1 spaghetti squash
  • 4 red potatoes
  • 1 green pepper
  • 1 onion
  • 3 chicken thighs
  • 3 Tbsp Green curry paste
  • 1/2 can Coconut milk
  • Water
  • 1 Tbsp coconut oil
  • Cilantro to top
  • EVOO, salt and pepper
  • Soy sauce and sriracha (optional)

Instructions

  1. Preheat oven to 400. Slice spaghetti squash in half lengthwise, remove seeds, sprinkle with EVOO, salt and pepper.
  2. Heat coconut oil. Cook potatoes, green pepper and onion on medium/high heat.
  3. Cut chicken into 1 inch chunks. Add chicken.
  4. Add green curry paste and water. Simmer for about 15 min.
  5. Add coconut milk.
  6. Take a fork to the squash to make it spaghetti and add to the pot.
  7. Top with cilantro, soy sauce or sriracha, depending on taste.
