Easy quick curry dish with spaghetti squash instead of rice.

Ingredients
- 1 spaghetti squash
- 4 red potatoes
- 1 green pepper
- 1 onion
- 3 chicken thighs
- 3 Tbsp Green curry paste
- 1/2 can Coconut milk
- Water
- 1 Tbsp coconut oil
- Cilantro to top
- EVOO, salt and pepper
- Soy sauce and sriracha (optional)
Instructions
- Preheat oven to 400. Slice spaghetti squash in half lengthwise, remove seeds, sprinkle with EVOO, salt and pepper.
- Heat coconut oil. Cook potatoes, green pepper and onion on medium/high heat.
- Cut chicken into 1 inch chunks. Add chicken.
- Add green curry paste and water. Simmer for about 15 min.
- Add coconut milk.
- Take a fork to the squash to make it spaghetti and add to the pot.
- Top with cilantro, soy sauce or sriracha, depending on taste.
This looks great, what would you suggest as a plant based alternative to chicken? Chick peas or tofu maybe?
