Pesto Farfalle with veggies, sausage, and green beans

Some nights you have lots of fresh home grown basil and make your own pesto, other nights you are trying to use up veggies before going out of town and use Costco pesto. The latter was tonight.

Makes about 4 servings.

Ingredients

  • 1/2 box farfalle pasta
  • 1/2 onion
  • 1/2 red pepper
  • 1 cup chopped broccoli
  • 6 asparagus
  • 1/2 box cherry tomatoes
  • 4 links Italian venison sausage
  • 1 tbsp olive oil
  • 3/4 to 1 cup of Costco pesto
  • Green beans
  • Grated Parmesan cheese

Instructions

  1. Slice the sausage and veggies into bite-sized pieces.
  2. Heat pan on medium/high. Start with a little bit of olive oil and the meat.
  3. After about 5 min add the veggies (except the tomatoes)
  4. Heat pot of water and add pasta once boiling.
  5. If your pot is small enough, steam green beans on top, if not boil another small pot of water.
  6. Add tomatoes to the pan once veggies are soft.
  7. Drain the pasta, add it along with the pesto to the meat/veggie pan. You can save some of the pasta water to add if you like a saucier sauce.
  8. Top with parm and eat! (Leftovers are good cold or hot)
