Starting to get some glimpses of warmer weather means it’s time for this fresh shrimp salad.
Ingredients
- 1 lb shrimp
- Chimichuri marinade
- Mixed greens (I used a mix of kale and spinach with shredded carrot)
- 2 cobs corn
- 1/2 green oeoper
- 1/2 red pepper
- 2 celery stalks
- 1/2 cucumber
- 3 small tomatoes
- 2 radishes
- 4 oz crumbled feta
- Dressing of choice (the Carnivore requested Italian)

I marinaded the shrimp while chopping everything else. Then cooked it and threw it on top at the end. Other than that Just chop/slice everything and throw it in a big bowl. This ended up looking like a massive amount, but it’s mostly low calorie stuff so probably 3-4 servings.
