Spring Shrimp Salad

Starting to get some glimpses of warmer weather means it’s time for this fresh shrimp salad.

Ingredients

  • 1 lb shrimp
  • Chimichuri marinade
  • Mixed greens (I used a mix of kale and spinach with shredded carrot)
  • 2 cobs corn
  • 1/2 green oeoper
  • 1/2 red pepper
  • 2 celery stalks
  • 1/2 cucumber
  • 3 small tomatoes
  • 2 radishes
  • 4 oz crumbled feta
  • Dressing of choice (the Carnivore requested Italian)

I marinaded the shrimp while chopping everything else. Then cooked it and threw it on top at the end. Other than that Just chop/slice everything and throw it in a big bowl. This ended up looking like a massive amount, but it’s mostly low calorie stuff so probably 3-4 servings.
