Carnivore’s leftover Brisket Tacos

The Carnivore made his first brisket on the traeger and it’s the best thing he’s ever made on a grill! He started it at about midnight on Friday and cooked it overnight at 180, wrapped it once it got to 160 internal temp and kept it going another 4-5 hours at 225. We didn’t get a picture of it with the potatoes he also did on the grill but it made for some great leftover tacos!

Toppings

  • Pico (chopped tomatoes, onions, cilantro, jalapeño, lime, salt and pepper)
  • Pickled onions
  • Avocado
  • Cheddar cheese
