Taste the rainbow doesn’t have to be that sugary Bullsh*t. (I was trying to channel thug kitchen, how’d I do?) When it’s 100 degrees this is the perfect fresh weeknight meal. Even the carnivore likes it, as long as we add shrimp, and the shrimp is hot.

A couple deviations from the recipe:
- I used beet greens as the lettuce.
- Added Red bell pepper
- Added some sliced red cabbage
- Subbed cashews for peanuts, cuz that’s what I had
- Added shrimp, because carnivore
