A few weeks ago I was in Virginia visiting Becky and had dinner at Mas, a wonderful recommendation from our wonderful friend, Laura Sparks. Mas is a cute tapas restaurant in Charlottesville. We had a bunch of tasty bites and hands down the best thing was smoked tomatoes. I wouldn’t have ordered it without the rec from Sparks, but they were incredible and I decided I had to try to recreate.
Ingredients
- 8ish Roma tomatoes
- Drizzle of garlic olive oil
- A few squirts of liquid smoke
- Salt and pepper

Instructions
We were also having some steaks on the smoker that night so I basically just threw the tomatoes on in a small cast iron pan with the steaks.
They were at 225 for like 45 min and then 500 for 6 min. I think next time I’d keep them at a higher temp longer.
They are super mushy, best to enjoy with some fresh bread.
They didn’t come out sizzling like they hd at Mas, but I think an overall success. The carnivore is raving about them. Added some basil to spruce them up but honestly didn’t need it, the flavor was 😗👌🏼
