Instant pot collard greens

This summer I’ve been helping out some friends who have a large garden slash small urban farm and also have twin babies and a toddler. The carnivore doesn’t love all my creations with the garden veggies but we both love the amount of collard greens I’ve come home with. Greens typically take all day, so finding a way to do them in the instant pot has been great!

Ingredients

  • 1 lb collard greens (I can fit up to about 1.5 lb in the instant pot if you want to double or triple)
  • 1 small onion, chopped
  • 3 cloves garlic
  • 2 strips of bacon, chopped
  • 2 tsp bacon grease
  • 1/2 tsp crushed red pepper
  • 3/4 cup chicken broth
  • 1/3 cup apple cider vinegar
  • Dash of sugar, brown sugar, or honey

Instructions

1. Heat bacon grease and cook bacon, onion & garlic.

2. Add collards, red pepper, sweetener, and liquids.

3. Cook on high pressure for 1 hour. I have no idea the best way to release, usually depends how much time I have.
