This is a favorite in the Stanek Family. Even the carnivore said “that corn salad isn’t terrible”, which is about as high of a compliment any salad gets.
- 4 ears corn, cut off the cob (can substitute 10 oz box frozen corn, thawed)
- 1/2 cup cubed pepper Jack cheese
- 2 green onions, thinly sliced
- 1 each diced small red pepper and small zucchini
- 1 small ripe avocado, diced
- 1/2 cup fresh minced cilantro
- Dressing:
- 2 T vegetable oil
- 1-1/2 T fresh lime juice
- 1 T sour cream
- 1-2 t Jalapeno (green) Tabasco sauce
- 1/2 t ground cumin
