Auntie Julie’s Corn Salad

This is a favorite in the Stanek Family. Even the carnivore said “that corn salad isn’t terrible”, which is about as high of a compliment any salad gets.

  • 4 ears corn, cut off the cob (can substitute 10 oz box frozen corn, thawed)
  • 1/2 cup cubed pepper Jack cheese
  • 2 green onions, thinly sliced
  • 1 each diced small red pepper and small zucchini
  • 1 small ripe avocado, diced
  • 1/2 cup fresh minced cilantro
  • Dressing:
  • 2 T vegetable oil
  • 1-1/2 T fresh lime juice
  • 1 T sour cream
  • 1-2 t Jalapeno (green) Tabasco sauce
  • 1/2 t ground cumin
