Roasted salsa and Brussels sprouts coleslaw with tamales

We’ve had these frozen homemade tamales from our friend Julie for a while. I have no idea how to make tamales so I made some roasted salsa and Brussels sprouts slaw to go with them!

Ingredients

Salsa

  • 2 tomatoes
  • 1/2 bell pepper
  • 4 cloves garlic
  • 1/4 of one red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Sprinkle of crushed red pepper

Coleslaw

  • 2 cups sliced Brussels sprouts
  • 1/2 red cabbage
  • 2 carrots
  • 1/2 cup pepitas
  • Dressing: 1/2 cup apple cider vinegar, 1/4 cup olive oil, 1 shallot, 1 tsp salt, 1/2 tsp celery seed

Instructions

Salsa

  1. Cut tomatoes in half. Place in air fryer at 400 with pepper and garlic for 10 min.
  2. Peel skin off pepper. Blend tomatoes, pepper, garlic and spices.
  3. Chop cilantro and onion.
  4. Add cilantro and onion to blender and pulse.

Coleslaw

  1. Slice Brussels sprouts and cabbage thin (using a mandolin if you have one. I need to start wearing a thimble when I use mine, I can’t seem to use it without cutting my thumb).
  2. Grate carrot.
  3. Combine dressing ingredients in a jar and shake.
  4. Combine all ingredients and toss.
